STAY IN THIS VALENTINE’S DAY

Every year around this time, most of us are scrambling to get a reservation for two on February 14th at a trendy, local hot spot. Hitting up your usual date night spots may have its benefits, but there are good reasons to consider staying in. Rather than spending your evening (and entire paycheck) on an expensive dinner, take your date to your very own dining room this valentine’s day. Here are some key benefits of staying in:

BENEFITS OF STAYING IN

Save money: This is an obvious one, but did you know that the average person (ahem, person, not couple) spends $136 on valentine’s day? Put that money back in your pocket and make a delicious and restaurant-quality meal right at home! See below for date night dinner inspo.

Quality time: Hitting up the hottest spots in town can be fun, but quality time could suffer. Screaming across the table just to be heard is never fun. When at home, you can take your time with conversation, speak at a normal tone, play a game (try a question game to see how well you know each other!) and/or watch a movie.

Here’s a tip: grab a bottle of wine, play some romantic music (I love the French Café station on Pandora), and make Valentine’s day dinner together.

No driving home: now, I am not encouraging you to get belligerent on valentine’s day, but when at home, you don’t have to worry about drinking and driving! Enjoy a glass (or three) of wine and relax knowing that your bed is just a few steps away.

Dramatically less crowds: You can eat whenever you want at home. No need to stand outside in the bitter cold or fight the crowds while you wait one hour just to be seated.

Make healthier choices –even without trying! Anytime we go out to eat, we eat far more calories, sodium and sugar than we normally would, even if we make the same foods at home ourselves. Indulge in yummy foods this valentine’s day and enjoy the peace and joy of knowing exactly what went into your dish.

3-COURSE VALENTINE’S DAY DINNER

APPETIZER- GARLIC PARMESAN KALE CHIPS

  • 1 bunch fresh kale
  • 3 cloves garlic, minced
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1/4 cup freshly grated parmesan cheese

Instructions

  • Remove stems from Kale. Chop into chunks and wash well. Dry well.
  • Place kale in a large bowl. Toss with olive oil, sea salt, pepper, and garlic.
  • Lay flat on a large baking sheet. For best results, don’t overcrowd the baking sheet.
  • Bake at 375 degrees F for 8 minutes.
  • Stir and toss on baking sheet. Cook 8 more minutes, or until the edges are crisp and light brown.
  • Remove from oven. Sprinkle with parmesan cheese. Serve warm.

SLOW COOKER CRUST-LESS APPLE PIE A LA MODE

This recipe is SO good! Top it with vanilla ice cream, or with a vanilla Greek Yogurt (try vanilla YQ by Yoplait or Icelandic Vanilla for a high protein and reduced-sugar option).
