Gluten-Free Brownies

Hi there! Vivian, the dietitian here with the BEST gluten-free brownies EVER! These are ooey, gooey, fudgy, rich in chocolate flavor, and it’s everything you hope for in a brownie without excessive amounts of added sugar. These are an excellent option for those who cannot have gluten (and I promise you will not notice the difference!), plus they are packed with fiber and protein making them a blood-sugar friendly and satisfying snack. What You Need to Make Gluten-Free Brownies

  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract⁣
  • 2 tablespoon coconut oil⁣
  • 1/4 cup of 2% Greek yogurt⁣
  • 1/2 cup maple syrup⁣
  • 3/4 cup gluten-free oats ground up into flour
  • 3/4 cup unsweetened cocoa powder ⁣
  • 1/4 teaspoon salt⁣
  • 1/4 teaspoon baking powder⁣

How to Make Gluten-Free Brownies

Preheat oven to 300°F/150°C and coat an 8 x 8 pan with nonstick cooking spray. In a medium or large bowl, add eggs, vanilla, coconut oil, Greek yogurt, maple syrup, and mix together with a whisk until it’s mixed well. Then, add flour, cocoa powder, salt, baking powder, and mix together until you reach a batter-like consistency. Pour batter into 8 x 8 pan and bake at 300°F/150°C for 14-18 mins. Slice into squares. I cut mine to make ~20 squares. Optional: dust with powdered sugar. ⁣
